Fish, fabulous fish! But what to choose – fresh or frozen, wild or farmed? When you’ve got it, what do you do with it? How do you clean & fillet the fish you’ve bought. How do you cook it?
We are an island nation and our coasts are teeming with a fantastic array of fish and shellfish. Learn how to choose fish, how to prepare it and how to cook it (or not, in the case of a ceviche or gravadlax!)
Typical recipes from the course include;
- Squid, chilli & lime ceviche
- Fish stock, fish soup, bouillabase
- Luxurious fish pie
- Home made Gravadlax
- Honey & chilli marinated prawns
- Sea Bass with fragrant coconut broth
