The history of Acetaia Dodi can be traced back to 1891 when the grandmother of the current patriarch, Ricordano Dodi, was born. All that history, and knowledge, of balsamic vinegar production combines in their Red, SIlver & Gold label Traditional Balsamic Vinegar of Reggio Emilia.
Dodi Red Label or Bollino Aragosta is richly acidic and less sweet than the Silver or Gold. Wonderful drizzled over cooked meat or use to enrich sauces, dips and dressings.
The first level of 'Tradizionale' balsamic vinegar, this is the real deal. It may seem expensive but when you consider the skill, artistry and time that goes into making it, you'll realise that it's worth every penny.
