Goats Cheese & Cranberry Parcels
Pre heat the oven to 200C. Cut each piece of filo into quarters, cut the cheeses in half. Lay one of the filo quarters on a work surface & brush with olive oil. Lay a second piece of filo on top, at an angle, brush with olive oil and repeat with the other two pieces, turning each sheet so that the filo sheets resemble a star.
Put a piece of cheese, cut side up in the centre of the star, top with a generous amount of cranberry sauce. Fold up the sides of the filo and scrunch them together slightly so they stay in place. Repeat until you have 4 parcels. Brush all over with olive oil.
Bake in the oven for 15-20 minutes until crisp and lightly golden. Meanwhile drop the chives into a pan of boiling water for a few seconds, lift out and drop into ice cold water. When the parcels are cooked, tie a chive ‘bow’ around the parcel before serving.
- 4 sheets ready made filo pastry
- 2 x goats cheese logs (or camembert etc)
- Olive Oil
- Jar cranberry sauce
- 4 longish chives
